The exotic organic seasoning salt is the perfect complement to fish & game dishes, foie gras, fresh goat cheese, fish, spinach, or rocket lettuce as well as pâtés.
This salt is the result of the evaporation of seawater and its crystallisation into fine leaves on the surface of the water in the salt ponds of the nature reserve Es Trenc in Mallorca. Preserved and nourished by this unique environment, tasteful salts are formed.
Before the crystal-clear seawater enters the saltworks, it flows through large beds of Posidonia oceanica, with high presence of sea plants. The natural salt needs a total of six months to mature into the white gold of Mallorca. The salt appears only on hot and windless days. Very fine salt crystals accumulate on the water surface for a few minutes every day from May to October in the rose-coloured salt basins, whose imaginative shapes resemble white flowers.
The traditional harvesting and packaging process is always by hand and must be completed each day before nightfall before the salt crystals dissolve. Using traditional rakes to extract the salt flower from the surface of the water, it is deposited into wicker baskets and dried in the Mallorcan sun. This type of work requires patience, skill and strength.
Harvesting does not alter the specific chemical, physical and organoleptic characteristics, resulting in a salt of exceptional quality. The salt in its native form is free from any chemicals, preservatives, stabilisers and additives, making it a naturally healthy salt.
